Vanilla Cheesecake

I love cheesecake. It's one of my favourite cakes ever. So, on Christmas Eve, I decided to make one, to be devoured (hopefully) on Christmas day.


I followed the 'Three Cities of Spain' cheesecake recipe, and, I'm happy to say, it turned out really well!! I ate the last slice yesterday :))



However, I found the ingredient measurements very odd. It said use 8 ounces of cream cheese for the filling, and 16 ounces of sour cream for the topping!! Crazy. There would definitely not be enough cheesecake filling if I only used 8 ounces ( 227 g). I think I ended up using around 340g, and even then my cake was much smaller than I wanted, so when I make it next time, I will use two 340 g Philadelphia packs, rather than one. Also with the sour cream amount, I just eyeballed it. You can see from the picture how thick that layer was, and that worked really well. I put a layer mixed with vanilla bean paste, lemon juice and grated lemon zest, then put it in to bake. Then, just before serving, I spooned another generous layer on top (with no additions), to make it look fresh and neat.


I also used the beloved Digestive biscuits instead of Graham crackers, and the base was delicious. I used less butter than the recipe stated, as it was already completely saturated. I didn't add any sugar to the crust, and only added 1 tablespoon to the cream cheese mixture. I also used 2 eggs instead of 4. And I didn't add any sugar to the sour cream. And actually, the cake was still quite sweet, because the digestive biscuits already contain so much sugar. I think you could go without using any sugar in the whole recipe, and it would taste great! I love a good, creamy cheesecake- one that is tangy and light, and can be eaten with fresh fruit or just by itself, and you don't need to drink water or plain tea on the side because it's so sweet.


Overall then, I'd say it was very simple to make, and a success!! I found the process enjoyable, and much much MUCH less stressful than making that atrocious pavlova. My mum, dad and aunty tried a piece of this cake and all enjoyed it, so I will definitely be making this again, and I'd like my grandma and sister to try some too. I recommend making it!
