Sirniki (Russian quark pancakes)

So I was scrolling through my camera roll today, and found an image of some sirniki that I made ages ago. I don't make these pancakes often, but they are one of my favourite desserts/snacks.


I usually buy the cheese from Sainsbury's , in the Polish section. Its called twarog and its a full-fat curd cheese. I love love love cheesy desserts like this, and they're so popular in Eastern European countries. If you've never had them before, don't worry- the cheese isn't salty, and think of it more as a different form of milk.


I used this recipe to make my sirniki: https://www.babaganosh.org/syrniki-russian-cheese-pancakes/. It was my first time making them in this way where you make the cheese batter, then dredge them in flour. When my mum makes them, she mixes the flour right into the batter, as she finds this prevents sticking to the pan.


I love them with raisins inside, and I made them with blueberries in the photo. However, the blueberries do tend to burst, and the juices spill out, which can mean that the pancakes stick to the pan.


I serve them with sour cream (of course), and home-made blueberry jam/compote.
